I was doing my daily Instagram scroll, when I came across one of my favorite influencers, @EarthyAndy. She is truly cool - lives in Hawaii, has 3 beautiful boys, and is all about that vegan, plant - based raw life.
I am the type of person who really enjoys testing recipes that are easy, and usually sweet in bar forms… So you know I had to try this one out.
I took her recipe for what she calls “hempies” and added my own touch. They came out amazing! I highly recommend eating them frozen, just out of the freezer.

TRY IT YOURSELF
1/12 cups smooth peanut butter + 1 tablespoon (set to the side)
1/3 cups maple syrup
1 tsp vanilla extract
1/3 cups hemp seeds
3 cups brown rice krispies
1 1/2 cups [vegan] chocolate chips
1/4 cup chia seeds
Mix the 1 1/2 cups of peanut butter, vanilla & maple syrup until smooth. Add in the hemp seeds, chia seeds, and rice kripies and mix.
Yes, it will be very thick, and when you are stirring and mixing it will feel like you are crushing the rice krispies but do not worry - this is normal!
Grease a rectangular pan and pat the peanut butter mixture on it and flatten out with a spatula.
For the chocolate top:
Melt chocolate and 1 tablespoon of peanut butter together over a double boiler.
Pour on top of the peanut butter - rice krispy base and freeze for at least 30 minutes. I let it freeze overnight and the entire bar really retained its shape when I cut it.
Cut into squares and store in a sealed container in the freezer.
Now every time you are craving a sweet, open up your freezer and enjoy a treat guilt-free! Both good for you and for the earth; well deserved!
